I’ve always enjoyed making flapjacks. In fact my mum had the best flapjack recipe and today I am sharing this with you. If you’d like to make flapjacks for the family or as a treat then you’ve come to the right place. These delicious chewy treats are so yummy and easy to make and you can add raisins for the extra fruity flavour.
Easy Flapjack Recipe
If your family is anything like mine, the minute they come home from work and school they announce they’re hungry! It’s can tricky to get the right balance and give your child a good snack that will keep them going until dinner time but not stop them from eating their evening meal.
After visiting the Sorted Food studio Sorted Food studio in London, I was challenged to share a recipe on Mama Foodie using a box of ingredients that I was gifted. I decided to make mum’s easy flapjack recipe and am now sharing it with you.
Chewy Flapjack Recipe Ingredients
100g raisins or currants
1 orange
60g unsalted butter
100ml sunflower oil
200g soft light brown sugar
50g honey
1 egg
1 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp ground cinnamon
240g porridge oats
How To Make Flapjacks
This is a simple flapjack recipe which is really easy to make. Here are the instructions.
Preheat the oven to 175 degrees celsius and line a large baking tray with a lip or a disposable foil tray with greaseproof paper.
Squeeze the juice from the orange into a bowl and add the raisins. Stir to combine and leave to one side.
In a large mixing bowl, add the butter, oil, sugar and honey.
Crack in the egg, then beat together the ingredients until light and creamy.
Spoon in the vanilla, baking powder and cinnamon, then beat in to evenly combine.
Weigh in the oats.
Scoop in the raisins, avoiding adding the excess orange juice, and combine the ingredients to form an evenly mixed dough.
Smooth into the prepared tray and place another sheet of greaseproof paper over the top and press down with another tray to flatten.
Bake for 15 minutes, then check if set, may need a further 10 minutes on the bottom shelf.
Allow to cool and then slice and serve!
