We love cooking together as a family, my daughter Phoebe (5) especially loves it, her favourite part is licking the spoon of course, and stirring the ingredients. I try to cook healthy for my family and today I am sharing these Summer Fruit Muffins.
Last week Bright Horizons nurseries sent us a recipe booklet, along with a doodle apron. Phoebe and her friends had fun colouring the apron in with the special pens that allow you to wash the apron and design it again to your heart’s content!
I let Phoebe decide what she wanted to make. She chose these Summer Fruit Muffins, so we gave them a go.
Making Fruit Muffins With Kids
The instructions were easy to follow and we had great fun cooking together as always. Daniel really enjoyed getting involved too!
I liked the fact that there was reduced sugar in this recipe. The sweetness of the fruit compensates for it.
The bran flakes and wholemeal flour make this recipe a high fibre muffin which is great for breakfast time.
The muffins weren’t as popular as the usual sweeter cakes and cupcakes and I think the bran flavour put my eldest (7) off. Daniel on the other hand, (my toddler almost 2) loved them and ate quite a few, whilst pointing and saying ‘Cake!’

Ingredients For Summer Fruit Muffins
- 50 g bran flakes
- 250 ml whole milk
- 105 g wholemeal flour
- 3/4 tsp bicarbonate of soda
- 50 g margarine or butter
- 50 g caster sugar
- 1 egg medium
- 100 g raspberries
- 75 g blueberries
How To Make Summer Fruit Muffins
These tasty summer Fruit Muffins are high in fibre and a great breakfast treat 1. Soak the bran flakes in the milk for 10 minutes. 2. Sift together the flour and baking powder. 3. Cream together the margarine and sugar, then beat in the egg. 4. Stir in alternate spoonful's of the soaked bran flakes and flour mixture. 5. Gently fold in the fruit. 6. Line a muffin tray with paper cases and half-fill each case with mixture. 7. Bake in a preheated oven for 30 minutes at 180°C/350°F/Gas mark 4Summer Fruit Muffins
