The best cauliflower rice recipe to stir fry with prawns and vegetables
Have you ever wondered how to make cauliflower rice? Well today I am sharing a fantastic recipe for cauliflower rice stir fry with vegetables and prawns. It’s a great dish, high in protein and low carb which is something you may just love!
How To Rice Cauliflower (Blitz Cauliflower)
It’s super easy to cook cauliflower rice! All you need is a whole or half cauliflower and a food processor and boom, there you go.
Heat your cauliflower rice up with a few tablespoons of water in the microwave and then drain and stir fry, it’s so easy and it tastes good. Cauliflower rice is low carb and low GI and full of nutrition.
Here’s the recipe, you can make your own sauce or use a store bought jar. Just keep an eye on the sugar content of the sauce you’re using – you can always reduce the amount you’re using or water it down to reduce the sugar content.
Ingredients For Prawn and Cauliflower Rice Stir Fry
1 Hald cauliflower finely chopped in the food processor
150g Prawns cooked and defrosted
1 pepper chopped and de-seeded
2 shallots finely chopped
1 clove garlic crushed
100g green beans
1 jar hoi sin or oyster sauce.
2 spring onions for garnish
How To Make Cauliflower Rice Stir Fry
Blitz the cauliflower half in the food processor. If you like, you can do the whole cauliflower and freeze half or save for another day.
Add 3 tbsp of water to the blitzed cauliflower in a bowl, cover and microwave for 3 minutes on full power. Drain any excess water.
Finely chop the shallots (or an onion if that’s what you have) and add a tbsp of olive or vegetable oil to a medium heat. Turn the heat down and add the chopped shallots and cook gently for 5 minutes or until softened.
While the onions are cooking set some water to boil and add a teaspoon of salt. Add the green beans and boil gently for 4 minutes, then drain and set aside.
Add the crushed garlic to the onions and fry gently for a further minute.
Add the chopped peppers and cook for another 2 minutes.
Add the prawns, cauliflower and the green beans and the sauce.
Stir to combine and then fry on a medium heat for 2 minutes.
Serve with the chopped spring onions on top.
